High Protein Greek Turkey Meatballs with Tzatziki and Roasted Potatoes

Ingredients

Meatballs

  • 1 lb lean ground turkey
  • 1 egg
  • ¼ cup finely diced red onion
  • 2 cloves garlic, minced
  • 2 tbsp fresh dill, chopped
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil (for cooking)

Potatoes

  • 2 medium russet potatoes, cut into wedges
  • ½ tsp paprika
  • Salt & pepper to taste
  • Light drizzle of olive oil

Salad

  • 1 cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • ¼ red onion, sliced
  • 6 Kalamata olives
  • 1 tbsp lemon juice

Tzatziki

  • 1 cup plain Greek yogurt
  • ½ cucumber, grated and squeezed dry
  • 1 clove garlic, minced
  • 1 tbsp fresh dill
  • 1 tbsp lemon juice
  • ¼ tsp salt

Instructions

1. Roast the potatoes

  • Preheat oven to 425°F (220°C).
  • Cut 2 medium russet potatoes into wedges.
  • Toss with:
    • ½ tsp paprika
    • Salt & pepper
    • Light drizzle of olive oil
  • Roast for 35–40 minutes, flipping halfway.

2. Make the meatballs

In a large bowl combine:

  • 1 lb lean ground turkey
  • 1 egg
  • ¼ cup diced red onion
  • 2 cloves minced garlic
  • 2 tbsp chopped dill
  • 1 tsp oregano
  • ½ tsp salt
  • ¼ tsp black pepper

Mix until just combined.

Roll into 12 meatballs

Heat 1 tbsp olive oil in a skillet over medium heat and cook the meatballs for 10–12 minutes, turning occasionally. Or airfryer for 12-15 minutes 375°F (190°C).

3. Make the tzatziki

Mix together:

  • 1 cup Greek yogurt
  • ½ grated cucumber (squeezed dry)
  • 1 clove minced garlic
  • 1 tbsp chopped dill
  • 1 tbsp lemon juice
  • ¼ tsp salt

Refrigerate while everything else cooks.

4. Make the salad

Combine:

  • 1 sliced cucumber
  • 1 cup halved cherry tomatoes
  • ¼ sliced red onion
  • 6 Kalamata olives
  • 1 tbsp lemon juice

Mix well.

5. Portion into 3 containers

Divide evenly:

  • 4 meatballs
  • ⅔ of a potato (about one-third of the roasted potatoes)
  • ⅓ of the salad
  • About ⅓ cup tzatziki
